Ingredients for 7 servings:

  • 7 liters of water
  • 500 g sugar
  • 500 g caster sugar
  • 2 organic lemons
  • ½ tsp yeast
  • Raisins

Instructions

Working time approx. 15 minutes; Rest period approx. 3 days; Total time approx. 3 days 15 minutes

Finnish May drink, national drink for May 1st

Dice the lemons with the peel. Bring to a boil with the sugar in the water. Once the liquid has cooled, add the yeast. Divide the raisins, according to taste, between screw-top bottles. Strain the liquid through a sieve and divide between the bottles, then seal tightly. Keep the bottles well chilled – if they are too warm, they may burst. When the raisins rise to the top, which should take about three days, the May drink is ready. Always serve chilled.
