Hunter's chicken

Ingredients for 4 servings:

  • 1 chicken, ready to cook, approx. 1.5 kg
  • salt and pepper
  • 2 large onions
  • 2 garlic cloves
  • 50 g bacon (rib bacon), diced
  • 1 pack of tomatoes, chopped
  • 3 tbsp olive oil
  • 200 ml dry white wine
  • 1 sprig(s) rosemary
  • 5 sage leaves

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Chicken alla chargrilla

Divide the chicken into 8 pieces, season with salt and pepper. Cut the onions into half-moons and the garlic into thin slices. Chop the herbs. Heat the olive oil in a roasting pan and sear the chicken pieces on both sides. Remove from the pan and sauté the onion rings and bacon in the oil. Deglaze with white wine. Add the garlic, tomato pieces, and the finely chopped herbs and bring everything to a boil briefly. Return the chicken pieces to the pan and cook everything in the oven at 190°C (top/bottom heat) for about 30 minutes. Serve with ciabatta.
