Ingredients for 4 servings:
- 2 chickens (approx. 1 kg each)
- Chicken seasoning
- 8 tbsp oil
- 1 tbsp oregano, shredded
- 1 tsp rosemary, shredded
- 2 bulbs of garlic
- 2 sprigs of thyme
Instructions
Working time approx. 50 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 50 minutes
Halve the chicken, wash inside and out, pat dry, and rub with chicken seasoning salt. Mix oil with oregano and rosemary, brush the chicken halves with it, and marinate for about 2 hours (set the remaining marinade aside). Split the garlic bulbs, peel off the cloves, and slice four of them. Wash the thyme, pat dry, and pick off the leaves. Score the chicken skin several times with a knife and insert the garlic slices. Grill the chicken for 35-45 minutes, turning occasionally, and sprinkle with thyme. For the garlic vegetables, wrap the remaining garlic cloves in aluminum foil with the remaining marinade and grill for about 15 minutes. Serve with a crisp salad and fresh baguette, if desired.
