Greek lemon chicken

Ingredients for 4 servings:

  • 1 chicken, split, cleaned
  • 750 g potatoes, washed, peeled, halved
  • 500 g onion(s), peeled, halved
  • 125 ml lemon juice
  • 125 ml olive oil
  • 1 jar olives, pitted, halved
  • 500 g feta cheese, diced
  • possibly basil, fresh
  • 2 bulbs of garlic
  • Salt and pepper, white

Instructions

Working time approx. 25 minutes; Rest time approx. 8 hours; Total time approx. 8 hours 25 minutes

Mix together olive oil, lemon juice, salt, pepper, and crushed garlic. Marinate the chicken pieces in the marinade, cover, and refrigerate overnight. Spread the potatoes, onions, and chicken on a baking sheet with slightly raised edges. Pour the remaining marinade over the chicken. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit) and cook on the middle rack for about 1-1.5 hours. Remove from the oven for the last 10 minutes and sprinkle with feta cheese. Sprinkle with basil before serving. Serve with fresh baguette. A light white wine complements the dish perfectly.
