Tomato-zucchini salad with mozzarella

Ingredients for 4 servings:

  • 1 large zucchini
  • 4 tomatoes
  • 250g mozzarella
  • 4 tbsp olive oil
  • ½ lemon(s), the juice
  • Salt
  • pepper
  • 1 garlic clove(s), finely chopped
  • 2 tbsp herbs, finely chopped

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Wash and grate the zucchini thoroughly. Briefly fry the zucchini slices on both sides in 2 tablespoons of oil. Slice the tomatoes and mozzarella. Make a juice from lemon juice, salt, pepper, garlic, herbs, and the remaining olive oil. Layer the zucchini slices, tomatoes, and mozzarella alternately in a dish, smothering the juices in spoonfuls. Pour the remaining juice over the dish once the dish is fully coated. Let it marinate.
