Green pasta dough with spinach

Ingredients for 4 servings:

  • 2 eggs
  • 2 tbsp spinach puree
  • 3 tbsp olive oil
  • 1 pinch of salt
  • 400 g flour

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Whisk the eggs. Add the spinach puree and oil, and season with salt. Then gradually add the flour and knead with a mixer until you have a smooth, pliable dough. If the dough is still too wet, simply add a little more flour. Cover the dough with a damp cloth and let it rest for half an hour. Then roll out the dough to the desired thickness and cut into narrow or wide ribbon pasta using a pizza cutter or a sharp knife. Cook the pasta dough “al dente” in boiling salted water.
