Mozzarella with mango and arugula

Ingredients for 4 servings:

  • 150 g arugula
  • 1 mango(s), fully ripe
  • 250g mozzarella
  • 2 tbsp balsamic vinegar, white
  • 3 tbsp extra virgin olive oil
  • Salt and pepper, from the mill
  • 1 orange(s), juice and peel
  • some Parmesan, in a piece

Wash and spin the arugula (or drain well). Peel the mango and slice it thinly. Drain the mozzarella and slice it thinly. Arrange the arugula on a platter, arrange the mango slices and mozzarella on top, and season with salt and pepper. Whisk the orange juice (and orange zest, if available), balsamic vinegar, and olive oil with a little salt, or, even easier, shake them in a screw-top jar and drizzle over the salad. Finally, sprinkle some Parmesan shavings (best done with a vegetable peeler) on top. Serve with fresh ciabatta bread. TIP: I like it even better with a mango-balsamic vinegar dressing and a little olive oil with orange. In this case, you can omit the orange juice.
