especially delicious with coffee, makes about 40 pieces

Quickly knead all ingredients except the almonds into a dough. Halve the almonds and knead them into the dough. Shape the dough into a ball, cover, and chill for 30 minutes. Preheat the oven to 200°C. After the chilling time, divide the dough into 6 pieces, each forming a 25 cm long roll. Line two baking sheets with baking paper and place three dough rolls on each sheet. Bake in the oven at 180°C for 10-15 minutes. Carefully lift the rolls from the sheet and let them cool. Then cut into slices about 1 1/2 cm thick. Distribute these between the two baking sheets and bake for another 10-15 minutes until golden brown. Store in tins. The cantuccini go perfectly with a strong coffee topped with whipped cream and cinnamon. A delicious recipe, not just for Christmas!
