Bruschetta with cherry tomatoes and basil

Ingredients for 4 servings:

  • 300 g cherry tomatoes
  • 1 small onion(s), white
  • 4 cloves garlic
  • 3 tbsp basil leaves, finely chopped
  • 1 tbsp vinegar (wine vinegar)
  • 1 tsp balsamic vinegar
  • 4 tbsp olive oil
  • Salt
  • Pepper, from the mill
  • 8 slices of ciabatta

Working time approx. 15 minutes; Total time approx. 15 minutes

Delicious little Mediterranean starter

Wash the cherry tomatoes and cut into small pieces. Peel and dice the onion. Peel the garlic and finely chop two cloves. Mix the tomatoes, onion, chopped garlic, and basil with both types of vinegar, olive oil, salt, and pepper; season to taste. Toast the slices of bread in the toaster and rub one side with the remaining garlic cloves while still hot. Arrange on a platter. Spread the tomato mixture over the slices of bread and serve immediately.
