Ingredients for 4 servings:

  • 1 cucumber(s)
  • 2 large beefsteak tomatoes
  • 2 spring onions (or 1 white onion)
  • pepper
  • Salt
  • oil
  • lots of fresh basil, chopped

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Cucumber salad with tomatoes and basil

Peel the cucumber, cut into thin slices, sprinkle with salt, and let it sit for about half an hour. Then drain the liquid from the cucumber. Arrange the cucumber on a platter. Cut the tomatoes into eighths and place them around the cucumber slices. Scatter thin slices of onion on top. Season the tomatoes with pepper and salt. Pour oil over the dish and sprinkle with the chopped basil.
