Italialady's orange salad with red onions

Ingredients for 4 servings:

  • 4 oranges
  • 1 large onion(s), red
  • 1 pomegranate
  • 50 g pistachios, coarsely chopped
  • 3 tbsp apple cider vinegar
  • 1 tbsp sugar, brown
  • olive oil
  • mint

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

with a pomegranate dressing

Peel the oranges so that all the white pith is removed. Then cut the oranges into approximately 1.5 cm thick slices. Peel the onion and slice thinly. Arrange the orange and onion slices decoratively either on 4 salad plates or a large serving platter. For the dressing, deseed the pomegranate and place the seeds in a tall bowl with the apple cider vinegar and sugar. Crush the pomegranate seeds with a potato masher. Stir the dressing until the sugar has dissolved. Spread the dressing over the orange and onion slices and drizzle with a little olive oil. Garnish with pistachios and mint leaves.
