Ingredients for 4 servings:

  • 250 g pasta (butterfly pasta)
  • 250g mozzarella
  • 250 g cocktail tomatoes
  • 250 g mushrooms, fresh
  • 1 bunch arugula
  • 60 g pine nuts
  • 5 tbsp vinegar (wine vinegar)
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • Sugar
  • 150 ml olive oil
  • some basil, fresh

Instructions

Working time approx. 15 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 15 minutes

Mediterranean pasta salad, got its name because it won a competition

Cook the pasta according to the package instructions. Dice the mozzarella, cherry tomatoes, and mushrooms. Combine the wine vinegar, balsamic vinegar, and olive oil and season with salt, pepper, and sugar. Mix with the pasta, mushrooms, mozzarella, and tomatoes and let stand for 2 hours. Tear the arugula into pieces. Roast the pine nuts without fat. Before serving, season the salad again and stir in the basil, arugula, and pine nuts.
