Ingredients for 6 servings:
- 50 g butter
- 1 medium-sized onion(s), finely chopped
- 3 medium-sized potatoes, finely diced
- 1 liter chicken broth
- 1 head of lettuce, washed and roughly chopped
- 1 bunch chervil, chopped
- 150 ml cream
- salt and pepper
- Chives, chopped and chervil for garnishing

Tuscan salad soup
Melt the butter in a saucepan and sauté the onion and potatoes. Cover and simmer over low heat for about 20 minutes. Deglaze with the chicken stock, bring to a boil, and add the lettuce and chervil. Let it simmer for a few minutes and then strain through a sieve (or a sieve). Return the soup to the heat and stir in the cream. Season with salt and pepper and sprinkle with chopped chives and chervil.
