Ingredients for 6 servings:

  • 50 g butter
  • 1 medium-sized onion(s), finely chopped
  • 3 medium-sized potatoes, finely diced
  • 1 liter chicken broth
  • 1 head of lettuce, washed and roughly chopped
  • 1 bunch chervil, chopped
  • 150 ml cream
  • salt and pepper
  • Chives, chopped and chervil for garnishing

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Tuscan salad soup

Melt the butter in a saucepan and sauté the onion and potatoes. Cover and simmer over low heat for about 20 minutes. Deglaze with the chicken stock, bring to a boil, and add the lettuce and chervil. Let it simmer for a few minutes and then strain through a sieve (or a sieve). Return the soup to the heat and stir in the cream. Season with salt and pepper and sprinkle with chopped chives and chervil.
