Ingredients for 4 servings:
- 4 tbsp olive oil
- 2 onions, diced
- 2 garlic cloves, finely chopped
- 1 tsp thyme
- 1 tsp sugar
- 1 tbsp balsamic vinegar
- 2 can/n tomatoes, 400 gr each.
- 1 liter vegetable broth
- 450 g cherry tomatoes, cut in half
- a few stalks of basil
- salt and pepper
Instructions
Working time approx. 25 minutes; Total time approx. 25 minutes
Sauté the onions in 2 tablespoons of oil over medium heat until translucent. Add the garlic and stir. After 1 minute, add the vinegar and sugar and sauté for 2 minutes. Combine the broth and canned tomatoes in a saucepan. Add the onions. Place the halved cherry tomatoes in a bowl, season with salt and pepper, and drizzle with 2 tablespoons of oil. Microwave on full power for 2 minutes. Purée the broth with the canned tomatoes and half of the microwaved tomatoes, then mix with the other half of the tomatoes. Serve sprinkled with torn basil leaves. Serve with crumbled feta cheese and ciabatta.
