Ingredients for 4 servings:
- 45 ml olive oil
- 4 chicken breasts
- 1 m.-large onion(s), red
- 30 ml red pesto
- 300 ml wine, red, Chianti
- 300 ml water
- 120 g red grapes
- Salt
- pepper
Instructions

Chianti chicken
Heat the olive oil in a pan and fry the chicken for about 5 minutes, until the chicken has changed color on both sides. Remove the chicken from the pan and place on kitchen paper to drain. Slice the onion into thin strips and heat in the remaining oil along with the red pesto. Cook over low heat for about 3 minutes, until the onions have changed color but are not brown. Add the Chianti and water to the pan and bring to a boil. Season with salt and pepper. Add the chicken and cook over low heat for about 10 minutes, until the chicken is tender. Finally, add the grapes to the pan and cook until they are also warmed through. Season the sauce to taste and serve. This also works with Pinot Grigio, white grapes, white onion, and green pesto.
