Ingredients for 4 servings:

  • 2 chicken legs
  • 2 chicken breasts
  • salt and pepper
  • 3 tbsp olive oil
  • 2 cloves garlic, finely chopped
  • ½ bunch sage, picked from the stems
  • 3 bay leaves
  • 250 ml dry white wine
  • 6 large tomatoes, peeled and diced
  • 150 g olives, black

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

with sage and bay leaves, tomatoes and olives

Rinse the chicken pieces briefly with cold water, pat dry, and rub generously with salt and pepper. Heat the olive oil in a roasting pan and fry the chicken pieces until golden brown on all sides. Add the sage, bay leaf, and garlic to the roasting pan and deglaze with the wine. Cover and simmer for 25 minutes. Add the diced tomatoes and olives and simmer for another 20 minutes. Season with salt and pepper. Serve with oven-fresh baguette and salad.
