Pasta with mushroom and arugula sauce

Ingredients for 4 servings:

  • 500 g pasta, e.g. spirelli
  • 1 tbsp olive oil
  • 400 g mushrooms, mixed and quartered
  • 1 shallot(s), finely chopped
  • 1 garlic clove(s), squeezed
  • 150 g mascarpone
  • 100 g arugula, roughly chopped
  • salt and pepper

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Cook the pasta al dente. Heat the oil in a frying pan and fry the mushrooms, onion, and garlic over medium heat for about 3 minutes. Add the cooking liquid and mascarpone, bring to a boil, reduce the heat, and simmer for about 5 minutes. Stir in the arugula and pasta, heat until just hot, season, and serve.
