Oat shortbread cookies

Ingredients for 1 servings:

  • 120 g butter
  • 90 g cane sugar
  • 1 egg(s)
  • 200 g oat flour
  • 30 g spelt wholemeal flour
  • 50 g nuts
  • Lemon(s) peel
  • Vanilla
  • Salt
  • lemon juice
  • Chocolate coating

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Cream the softened butter until fluffy, gradually stir in the brown sugar, add the egg, and continue stirring until the mixture is very creamy. Add the lemon juice. Combine the oat and spelt flour, nuts, and spices and fold into the butter mixture (using a whisk). Fill the mixture into a piping bag and pipe cookies onto a baking sheet. Let the sheet rest in a cool place for about 30 minutes. Bake at 180°C for 10-15 minutes. Once cooled, decorate with chocolate coating.
