Roberto's Italian pasta salad

Ingredients for 4 servings:

  • 250 g pasta (e.g. penne)
  • 2 can/n tomatoes, pieces of 400 g each
  • 1 garlic clove(s)
  • 2 tbsp balsamic vinegar
  • salt and pepper
  • 1 bunch of basil
  • 1 bunch of parsley
  • 1 zucchini
  • 150 g sausage (e.g. mortadella or Lyoner) or cooked ham
  • 150 g cheese (hard cheese or mozzarella)
  • possibly olives, whole or chopped
  • Sugar
  • Tabasco
  • Worcestershire sauce
  • olive oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

For hot days! Also for grilling!

Add the canned tomatoes and their juice to a salad bowl. Season to taste with salt, freshly ground pepper, balsamic vinegar, a little Worcestershire sauce, a dash of Tabasco, and a generous pinch of sugar. Add the roughly chopped basil and parsley. Toss with olive oil, if desired. Cook the penne in plenty of salted water until al dente. While still warm, add it to the tomato sauce with 2-3 tablespoons of the pasta water and let it simmer. In the meantime, cut the zucchini, sausage, and cheese into approximately 1 cm pieces and mix them with the pasta. P.S.: If you’re only serving the pasta salad as a side dish for a barbecue, you can omit the sausage and just sprinkle a few roughly chopped olives on top. Don’t use fresh tomatoes, as the salad will taste bland.
