Ingredients for 3 servings:

  • 250 g pasta (tortiglioni)
  • 4 garlic cloves, approx., possibly more
  • 125 ml tomato juice
  • 200 g cherry tomatoes
  • 100 g black olives (good quality)
  • 10 balls of mozzarella, mini
  • 1 onion(s)
  • 4 tbsp Balsamic vinegar Bianco
  • 4 tbsp olive oil
  • 1 bunch arugula
  • salt and pepper
  • 1 pinch(s) of sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 20 minutes; Total time approx. 40 minutes

The marinade made from tomato juice gives the special taste

Cook the pasta and garlic cloves in plenty of salted water. Drain, reserving the garlic cloves. Rinse the pasta and drain well. Wash and halve 200g of cherry tomatoes. Drain the olives and mozzarella. Finely chop the onion and garlic, mix with the tomato juice, balsamic vinegar, pepper, salt, sugar, and olive oil. Season the dressing to taste and toss with the pasta. Then stir in the cherry tomatoes, mozzarella, and olives. Let stand for 20 minutes. Wash and dry the arugula, and stir it into the pasta salad shortly before serving.
