Italian chicken parcels

Ingredients for 4 servings:

  • 1 tbsp olive oil
  • 6 servings of chicken breast fillet(s)
  • 250g mozzarella
  • 500 g zucchini, sliced
  • 6 tomatoes, sliced
  • 1 bunch of basil
  • 400 g pasta (fusilli)
  • salt and pepper

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cut 6 squares of aluminum foil, each 25 cm long. Brush the squares thinly with oil and set aside for now. Salt each chicken breast fillet and cut it crosswise several times with a knife. Cut the mozzarella into slices and insert them into the cuts. Arrange the zucchini and tomato slices on the foil squares and sprinkle with salt and black pepper. Tear or chop the basil and sprinkle over the vegetables. Arrange the chicken breast fillets on top of the prepared vegetables and fold the foil ends together to form tightly sealed parcels. Place the parcels on a baking sheet and bake in an oven preheated to 200°C for about 30 minutes. To serve, open the parcels and serve with freshly cooked fusilli.
