Spaghetti pancakes with Parmesan

Ingredients for 2 servings:

  • 150g spaghetti
  • salt water
  • 2 eggs
  • 20 g Parmesan, grated
  • salt and pepper
  • 2 tbsp oil

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Break the spaghetti into four pieces and cook in salted water until tender. Drain, and let cool. Mix the spaghetti with the eggs and Parmesan cheese and season with salt and pepper. Heat the oil in a pan. Add the pasta and egg mixture in portions to the pan with a ladle and press flat to form fritters. Cook the fritters for 2-3 minutes on each side, remove from the pan, and let drain. Keep warm in the oven at 160°C until all the fritters are cooked. Serve with paprika and herb quark. Tip: To ensure the cheese fritters are nice and crispy, let the pasta cool completely.
