Italian Lady's Frittata alla napolatana

Ingredients for 4 servings:

  • 3 eggs
  • e.g. pasta, cooked from the day before (leftovers)
  • 1 handful of Parmesan, grated
  • n. B. Oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Omelette with noodles, using leftovers

The amount of eggs depends on the amount of pasta. Crack the eggs and mix with the pasta and Parmesan cheese. Season with salt and pepper. Heat the oil in a pan and add the mixture. Reduce the heat, otherwise the omelet will burn. Cover the pan and let the egg set a little. After about 5 minutes, flip the omelet and cook that side. I serve it with a green salad or, if I have any leftover, tomato sauce from the previous day.
