Gnocchi with leaf spinach

Ingredients for 4 servings:

  • 500 g fresh leaf spinach
  • 40 g tomatoes, dried in oil
  • 1 garlic clove(s)
  • 4 tbsp olive oil
  • Salt
  • 500 g gnocchi, fresh
  • 80 g feta cheese

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean and wash the spinach and drain well. Then chop roughly. Drain the sun-dried tomatoes and finely dice. Peel and slice the garlic. Heat oil in a large pan. Sauté the garlic and tomatoes. Add the spinach, let it wilt, and sauté until the liquid has almost completely evaporated. Season with salt. Cook the gnocchi in salted water, drain, and let it drain. Stir into the spinach. Cook for another 2 minutes and season with salt, if desired. Crumble the feta cheese, sprinkle over the gnocchi, and serve immediately. Tip: I like to prepare this dish in a wok, as I find it more convenient than a large pan.
