Arugula salad with feta cheese

Ingredients for 4 servings:

  • 125 ml grape juice
  • ½ tsp mustard
  • 3 tbsp vinegar (apple cider vinegar)
  • 1 tsp honey
  • 2 tbsp oil (sunflower oil)
  • salt and pepper
  • 1 bunch arugula
  • 150 g sheep’s cheese
  • 2 tomatoes
  • 2 tbsp chives, rolled
  • 2 tbsp hazelnuts, sliced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Mix the grape juice with mustard, vinegar, and honey. Add the oil and season with salt and pepper. Wash and trim the arugula. Dice the feta cheese. Wash and dice the tomatoes. Arrange the arugula, cheese, and tomatoes on plates. Sprinkle with chives and hazelnut flakes. Drizzle the dressing over the salad just before serving.
