Italian rice dessert

Ingredients for 4 servings:

  • 1 liter of milk
  • 250 g rice
  • 100 g sugar
  • 100 g biscuits (amarettini)
  • 50 g raisins
  • 30 g pistachios
  • 1 egg(s)
  • 1 lemon(s), grated peel
  • 1 tsp cinnamon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Pour the milk and salt into a large saucepan or deep frying pan. Roughly chop the pistachios. Grate the lemon zest. Add the raisins, chopped pistachios, lemon zest, and rice to the milk and simmer over low heat for about 30 minutes, stirring occasionally. Remove the rice pudding from the heat and allow to cool slightly. Rinse a 2-liter dish with cold water. Crumble the amaretti biscuits and sprinkle about a third of them into the dish. Add the remaining amaretti biscuits to the rice pudding along with the egg, sugar, and cinnamon, and mix well. Then pour the rice pudding into the dish and refrigerate for a few hours before serving.
