Penne in tomato sauce with bacon and cheese

Ingredients for 3 servings:

  • 4 tbsp olive oil
  • 200 g bacon, streaky
  • 6 tbsp white wine, dry
  • 1 onion(s), finely chopped
  • 400 g tomatoes from the can, diced or 500 g fresh tomatoes, peeled, diced
  • salt and pepper
  • 350g penne
  • 6 tbsp cheese, grated (e.g. Gouda)

Working time approx. 20 minutes; Total time approx. 20 minutes

Penne Amatriciana

Cook the penne in plenty of salted water until al dente. Heat the oil in a large pan, brown the bacon, deglaze with the wine, and reduce the wine by half. After about half a minute, add the diced onion and sauté for about 5 minutes, stirring. Add the tomatoes and let the sauce reduce slightly. Season to taste with salt and pepper. Add the penne and cheese to the hot sauce, toss everything briefly, and serve immediately.
