Ingredients for 4 servings:
- 4 m.-large zucchini
- Salt
- 1 small can of tomato paste
- 2 garlic cloves, finely chopped
- 1 tsp lemon(s) – zest, grated
- 1 bunch thyme, chopped
- ½ tsp salt
- pepper
- 8 slice(s) bacon, streaky, thin
- 2 tbsp butter, for the baking tray
- 1 cup mozzarella, diced
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Zucchini wrapped in bacon
Wash the zucchini and blanch in boiling salted water for 5 minutes. Remove, halve, and place on the work surface. Combine the tomato paste with the garlic, lemon zest, and thyme and brush the zucchini halves with it. Put the zucchini halves back together and wrap each with two slices of bacon. Grease an ovenproof dish and place the zucchini in it. Sprinkle with cheese and bake in an oven preheated to 200°C for 15 minutes.
