Ingredients for 2 servings:

  • 300 g turkey schnitzel
  • 2 tsp flour
  • 1 tsp, leveled salt
  • 1 pinch(s) black pepper
  • 4 sprig(s) Thyme , alternatively 1/2 tsp Thyme shredded)
  • 1 lemon(s)
  • 4 tbsp extra virgin olive oil, cold squeezed
  • ½ cup broth or water

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Cut the turkey cutlets into bite-sized strips and place them in a bowl. Pick the leaves from 4 thyme sprigs and place them on the meat. Sprinkle 2 teaspoons of flour, 1 teaspoon of salt, and 1 pinch of black pepper over the meat and mix thoroughly. Squeeze the juice of one lemon. Heat 4 tablespoons of olive oil in a pan and briefly brown the turkey cutlets over high heat. Reduce the heat and continue to cook, stirring constantly, until the meat has changed color. Deglaze with the lemon juice and 1/2 cup of the broth. Cover and cook at low heat for another 5 minutes. Serve with fried polenta slices or oven-baked potatoes. Variation: You can also add a few tablespoons of white wine along with the lemon juice.
