Sicilian-style chicken thighs

Ingredients for 4 servings:

  • 2 onions, red
  • 1 garlic clove(s)
  • 1 zucchini
  • 4 chicken legs
  • Salt
  • pepper
  • 2 tbsp clarified butter
  • 1 sprig(s) of thyme
  • some oregano, dried
  • 1 can of tomatoes (pieces)
  • 100 ml wine, white, dry
  • 80 g black olives

Peel the onions and cut into eighths, clean and finely chop the garlic. Wash the zucchini and cut into approximately 1 cm pieces. Rinse the chicken thighs and pat dry with a kitchen towel, season with salt and pepper. Heat the lard in a pan and sear the thighs vigorously on both sides. Place the thighs in an ovenproof dish. Briefly fry the onions and garlic in the pan and deglaze with the tomato pieces and white wine. Stir in the herbs and pour the sauce over the chicken thighs. Place the dish with the thighs and the sauce in the preheated oven at about 175°C for 10 minutes, then add the diced zucchini and the halved and pitted olives and let the whole thing rest in the oven for another 10 minutes.
