Tiramisu Parfait

Ingredients for 6 servings:

  • 2 eggs
  • 2 egg yolks
  • 100 g sugar
  • 200 g mascarpone
  • 250 g cream
  • 60 g Amaretto
  • 1 pkt. ladyfingers
  • 2 cups of coffee
  • 2 tbsp cocoa powder
  • some fruits

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Whip the cream until stiff and chill. Prepare a large bowl with ice cubes. Beat the eggs, egg yolks, and sugar in a double boiler until rose-like (the mixture should be thick; be careful not to overheat, or the egg will curdle). Place the mixing bowl in the ice cubes and continue beating until cold. Fold in half of the cream, then the mascarpone and amaretto, and finally the remaining cream. Soak the sponge fingers in coffee and place in a glass or bowl. Spread the cream on top. Freeze for about 3 hours. To serve, dust with cocoa and serve with fresh seasonal fruit.
