Green beans with peppers and tomatoes

Ingredients for 4 servings:

  • 500 g green beans
  • 2 large tomatoes, peeled and chopped
  • 2 bell peppers, yellow
  • 1 m.-sized onion(s), cut into rings
  • 2 garlic cloves, chopped
  • 4 tbsp olive oil
  • e.g. salt and pepper
  • e.g. oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Peperonata pasta

Heat the oil in a pan and fry the onion rings until golden brown. Add the garlic and bell peppers, and after 5 minutes, the tomatoes. Simmer over low heat for 20 minutes, stirring occasionally. Meanwhile, clean the beans and blanch them in salted water for 8 minutes. Drain the beans and then add them to the pan. Season with salt and pepper. Cover the pan and simmer for another 5 minutes. Sprinkle the vegetables with oregano and serve.
