Ingredients for 3 servings:

  • 1 eggplant(s)
  • 1 sprig(s) of thyme
  • 1 sprig(s) marjoram
  • 1 sprig(s) of oregano
  • 1 sprig(s) basil
  • some olive oil
  • some salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

fried eggplant

Wash the eggplants, cut them into thin slices using a sausage slicer (this creates a smooth surface!) (approx. 20-25 slices per eggplant). Brush a large nonstick pan with oil (or spray with oil from a spray bottle), and fry the eggplant slices until lightly browned. Spray the other side lightly with oil, flip, and finish cooking. Lightly season with salt and pepper, arrange in a porcelain dish, and sprinkle with finely chopped herbs. Delicious hot or cold, this is a very low-fat preparation for eggplants.
