Pasta with radicchio

Ingredients for 4 servings:

  • 500 g pasta, e.g. farfalle or penne
  • 1 clove(s) garlic
  • ½ onion(s)
  • 150 g bacon, diced
  • 1 radicchio
  • 2 cups of cream, possibly mixed with milk or pasta water
  • olive oil
  • salt and pepper
  • n. B. red wine
  • Walnuts, chopped
  • Parmesan

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Pasta with radicchio, cream and bacon

First, put a pot of water on the stove for the pasta. Wash the radicchio and pick the leaves. Heat a little olive oil in a pan. Dice or strip the garlic and onion and fry until translucent. Add the bacon and fry briefly. Then add the picked radicchio leaves. Fry until the leaves have wilted, then add the cream and simmer for a few more minutes. Use either two cups of cream or just one cup, plus a little pasta water or milk for those who prefer it less creamy. Season to taste with red wine, salt, and pepper. Serve on plates sprinkled with chopped walnuts and Parmesan cheese, if desired.
