Ingredients for 4 servings:

  • 400 g pasta
  • 500 g tomatoes, nice ripe or peeled from the stem
  • 25 g carrot(s), cut into cubes
  • 10 g onion(s), diced
  • 10 g celery, cut into cubes
  • 2 garlic cloves, crushed
  • 5 sprigs basil
  • 5 sprigs of parsley
  • 6 tbsp olive oil
  • Salt and pepper, white from the mill
  • Sugar
  • 8 tsp grated sheep cheese (Pecorino)

Working time approx. 20 minutes; Total time approx. 20 minutes

Pasta with classic Tuscan tomato sauce

In a medium saucepan, combine 4 tablespoons of oil, the peeled and diced tomatoes, all the vegetables, the parsley and basil leaves (roughly torn with your fingers), salt, pepper, and sugar. Mix the ingredients well, cover, and simmer over very low heat for 30 minutes, stirring occasionally. Remove from the heat, let cool, and strain the sauce. Season to taste. If the sauce is too runny, let it simmer a little longer. Prepare the pasta according to the instructions. Toss the pasta with 2 tablespoons of good olive oil and add to the tomato sauce. Serve sprinkled with pecorino cheese.
