Arugula with orange fillets

Ingredients for 4 servings:

  • 2 large oranges
  • 1 large onion(s), red
  • 1 bunch arugula, without stems
  • 150 g Parmesan
  • 8 tbsp olive oil
  • Balsamic vinegar crema
  • Salt and pepper, from the mill

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Sicilian appetizer salad

Wash the arugula and remove the stems. Peel the oranges, removing all the white pith. Then slice them thinly. Slice the red onion into thin rings. Grate the Parmesan cheese. Arrange the orange slices in a circle on the plate, then place the onion rings on top. Sprinkle the arugula over the top and scatter the Parmesan cheese on top. Season with salt and pepper, drizzle with olive oil, and garnish generously with balsamic vinegar.
