Ingredients for 4 servings:
- 160 g arugula
- 3 bulb(s)
- 300 g blue cheese
- 100 g pine nuts
- 30 g butter
- 2 tbsp sugar
- 1 shot of balsamic vinegar
- 1 pinch of salt
- 1 pinch(s) of pepper

This salad is perfect for a three-course meal, but can also be enjoyed for dinner with two slices of baguette and a glass of red wine. Wash the arugula and drain well. Quarter and slice the pears. Meanwhile, toast the pine nuts in a pan until nicely browned. Melt the butter in a pan, then add the sugar and caramelize. Deglaze with balsamic vinegar and fry the pears for about 2-3 minutes on each side. Finally, dice the blue cheese and arrange it on the arugula bed with the pears and pine nuts. Season with salt and pepper to taste. Baguette and red wine go well with this salad.
