Zucchini frittata with Parma ham

Ingredients for 4 servings:

  • 2 zucchinis
  • 1 onion(s)
  • 1 clove(s) garlic
  • 1 bunch of basil
  • 125g mozzarella
  • 4 tbsp olive oil
  • 6 eggs
  • Salt
  • Pepper, white, from the mill
  • 8 slices of Parma ham
  • Basil, for garnishing

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Dice the zucchini. Chop the onion, garlic, and basil. Drain the mozzarella and dice it. Heat 2 tablespoons of olive oil. Sauté the onion, garlic, and zucchini cubes for 3-4 minutes. Remove from the pan. Beat the eggs and season with salt and pepper. Stir in the chopped basil. Heat 2 tablespoons of olive oil in a 22 cm diameter pan. Pour in the egg mixture. Spread the mozzarella and zucchini mixture on top. Cook over medium heat for 6-8 minutes until set. Slide the omelet onto a plate and return it to the pan, upside down. Cook for another 3 minutes. Cut the frittata into 8 pie slices. Top each with a slice of ham and garnish with fresh basil.
