Radicchio rolls with Parma ham

Ingredients for 20 servings:

  • 4 radicchio, small heads
  • 4 tbsp olive oil
  • 100 g honey
  • 200 ml balsamic vinegar
  • 10 slices of Parma ham, halved lengthwise
  • 100 g Parmesan, coarsely sliced
  • 2 cloves garlic, finely chopped
  • Salt
  • pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Wash the lettuce leaves, shake dry, remove the stems, and halve or quarter them depending on their size. Heat the olive oil in a pan and briefly toast the lettuce wedges. Season with salt and pepper, and let cool. Bring the honey and balsamic vinegar to a boil and reduce by about 1/3. Spread the cooled radicchio over the ham strips, sprinkle with garlic and Parmesan cheese, and roll them up. Arrange the rolls on a platter and drizzle with the balsamic reduction. Serve with white bread.
