Chicken in basil and tomato sauce

Ingredients for 4 servings:

  • 100 g onion(s)
  • 500 g chicken breast fillet(s)
  • 750 g tomatoes
  • 1 bunch of basil
  • 2 tbsp oil
  • 200 g crème fraîche
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and dice the onions finely. Rinse the chicken breast fillets with cold water, dry them, and dice them very finely. Score the tomatoes and briefly place them in hot water. Remove them, skin them, and then roughly dice them. Wash the basil and shake it dry, then set a few leaves aside for garnish. Finely slice the rest. Heat the wok (preferably) and then the oil in it. Stir the onions until translucent. Gradually add the chicken and fry for about 1 minute, stirring constantly, then push the onions to the sides. Then add the chopped tomatoes and crème fraîche to the wok. Mix all the ingredients together, season with the finely chopped basil, salt, and pepper. Simmer over high heat for about 4 minutes, stirring constantly. Season the sauce with salt and pepper and serve garnished with the basil leaves. Tip: Round off the sauce with a little wine. Serve with green tagliatelle.
