Ingredients for 3 servings:
- 4 turkey schnitzels
- 3 beef tomatoes, fresh
- 1 zucchini
- 1 bell pepper(s), yellow
- 1 large onion(s)
- 4 slices of cooked ham
- 8 slices of cheese (Emmental or Gouda)
- 4 tbsp tomato paste
- Salt and pepper, pepper, , , if needed
- Paprika powder
- oregano
- possibly chili powder
- e.g. parsley, flat
- n. B. water

Wash the schnitzels, pat dry, and pound them flat. Season both sides with paprika and pepper. Place a slice of ham and a slice of cheese on top. Cut a few thin rings of onion into strips and place them on the edge of the schnitzels. Dice a beefsteak tomato and place it on top of the onions. Carefully roll up the schnitzels and secure them with a toothpick or kitchen string. Heat oil in a pan until very hot and fry the rolls briefly. Place the rolls in a baking dish, spread the remaining cheese over the schnitzels, and cook in a preheated oven at 180°C. While the meat is cooking, dice the vegetables (zucchini, peppers, tomatoes, and the remaining onion) and add them to the same pan. Once the vegetables are translucent, season with salt and pepper (add a little chili if desired). Pour 3-4 tablespoons of tomato paste over the schnitzels and roast for 1 minute. Deglaze with a little water and simmer. The schnitzels should be done after about 20 minutes. When serving, carefully remove the rolls from the pan and serve with the vegetable sauce. Serve with rice, spaetzle, or noodles.
