Recipe from South Tyrol

Preheat the oven to 100 degrees Celsius (212 degrees Fahrenheit). Peel the onion and slice thinly. Cut the slices into rings. Rinse the meat in cold water, dry it, and season generously with pepper on both sides. Heat the oil in a large pan until crisp and sear the meat slices on both sides. Season with salt, reduce the heat slightly, and cook for another 3 to 4 minutes. Remove from the pan and cover and keep warm in the preheated oven. Wash, dry, and chop the parsley. Melt the butter in the pan and brown the onion. Lightly dust with flour, add the parsley, and season with salt and pepper. Place the meat slices on plates and spread the onion mixture on top. Serve immediately. Side Dishes: Roasted Potatoes
