Recipe for the wood-fired oven
Preheat the oven to about 350°C. Push the burning wood to one side. Brush the exposed side of the baking surface with a coconut brush and wipe it with a damp jute or cotton cloth. Shape the pizza dough into a thin, approximately 30 cm pizza. Brush the dough with oil and spread the tomato sauce on top, leaving a thumb’s width around the edges. Slice the mozzarella and place half of it on the pizza. Cut the figs into eighths and arrange them on top. Add the remaining mozzarella and the goat cheese on top. Place the pizza in the oven and bake for 3 to 4 minutes, rotating it slightly. Check the crust by gently lifting it. Remove the pizza from the oven and let it rest for 3 minutes. Top with the ham and arugula and enjoy.
