Ingredients for 6 servings:

  • 1 liter of milk
  • 200 g rice
  • 150 g sugar
  • Salt
  • lemon juice
  • 100 g marzipan
  • 5 egg yolks
  • 3 eggnog
  • butter
  • Bitter almond aroma

Instructions

with marzipan

Bring 200g of rice to a boil in 1 liter of milk, add a little butter and 150g of sugar, and keep the heat low. Once the mixture has thickened slightly, add the crushed marzipan, salt, and lemon juice, whisking thoroughly. Then add 5 egg yolks and 3 whole eggs, whisking thoroughly. Grease a cake pan with butter and sprinkle with breadcrumbs, then pour in the soft rice pudding mixture. Bake in the oven at approximately 230°C until the surface is golden brown. The basic shape of the torta di riso is a typical recipe from Bologna or Emilia-Romagna.
