Raspberries in baked vanilla cream

Ingredients for 4 servings:

  • 1 vanilla pod(s)
  • 40 g cane sugar
  • 100 g whipped cream
  • 3 egg yolks
  • 500 g raspberries
  • 100 g powdered sugar
  • 20 ml raspberry liqueur

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Beat the egg yolks, vanilla bean pulp, and sugar in a bowl over a hot water bath for 5 minutes until fluffy and creamy. Remove the bowl from the pan and whisk the mixture back in cold water. Whip the cream until stiff peaks form and fold it into the mixture. Sort the raspberries and marinate them with powdered sugar and raspberry brandy. Place the fruit in an ovenproof dish. Spread the gratin mixture over the raspberries. Set the oven to the highest setting and gratinate the dessert for about 5 minutes until golden brown. Dust with powdered sugar before serving.
