Italian baked potatoes

Ingredients for 6 servings:

  • 1 ½ kg medium-sized potatoes (2-3 per person)
  • Salt
  • 2 tbsp olive oil
  • 2 onions
  • 500 g tomatoes, pieces, with herbs
  • 300 g cream
  • 50 ml water
  • 100 g processed cheese
  • 3 tbsp Parmesan, grated
  • 1 tbsp tomato pesto
  • 250 g mushrooms, sliced
  • 100 g peas (frozen)
  • Cayenne pepper
  • Black pepper, freshly ground
  • 4 dashes Worcestershire sauce
  • 150 g Parma ham or bacon, one slice per potato

Instructions

Working time approx. 35 minutes; Total time approx. 35 minutes

Wash the potatoes and cook in boiling salted water. Then drain and peel. Heat the olive oil and sauté the diced onion. Add the chopped tomatoes, cream, and water and bring to a boil briefly. Add the cream cheese and stir to dissolve it in the hot sauce. Add the Parmesan, pesto, mushrooms, and peas and mix everything well. Finally, season with cayenne pepper, salt, pepper, and Worcestershire sauce. Wrap each potato in a slice of ham and place them side by side in an ungreased baking dish. Pour the sauce over the potatoes and bake in a preheated oven at 180°C for 20-25 minutes. Remove from the pan and serve immediately. This goes very well with steamed or fried fish.
