Tuscan potatoes

Ingredients for 4 servings:

  • 12 m.-sized potatoes
  • 2 onions
  • 4 cloves garlic
  • 1 ½ bell peppers (red)
  • 12 tomatoes (the small vine tomatoes)
  • 1 tbsp rosemary
  • 1 tsp pepperoncini
  • 150 g cheese for topping (Gouda, Parmesan, mountain cheese, raclette, etc.)
  • herbal salt,
  • 50 ml olive oil
  • pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and cut into wafer-thin slices. Place them in a bowl. Cut the bell pepper into thin strips and add them to the bowl. Crush the garlic cloves, add the rosemary, peperoncini, herb salt, and pepper, and mix well with the olive oil. Transfer the mixture to a baking sheet and coarsely grate the cheese over the potatoes. Simply place the tomatoes around the baking sheet; do not chop them! Set the oven to 160°C (fan-assisted). Bake the potato mixture for about 35 minutes, until the potatoes are tender. Served with herb quark, it makes a delicious vegetarian main course. Or as a side dish.
