Lemongrass Panna Cotta

Ingredients for 4 servings:

  • 2 stalks of lemongrass
  • 500 g whipped cream
  • 40 g sugar
  • 1 vanilla pod(s)
  • 5 sheets of white gelatin
  • 1 pinch of salt

Instructions

Working time approx. 30 minutes; Rest time approx. 5 hours; Total time approx. 5 hours 30 minutes

Pound the lemongrass until stiff, halve the vanilla pod, scrape out the seeds, and add both to the cream. Bring the cream to a boil with a pinch of salt, the lemongrass, the vanilla, and the sugar. Then simmer for 15 minutes. Meanwhile, soften the gelatin in cold water. After 15 minutes, remove the cream from the heat and remove the lemongrass and vanilla pod. Dissolve the gelatin in the cream. Then strain the cream into cold, rinsed bowls and chill for 5-6 hours. If you like, turn the panna cotta out onto a fruit platter. Tip: Add the lemongrass to the cream the day before. This helps the cream infuse even better.
