Cheese – Banana – Coffee Cake

Ingredients for 1 servings:

  • 200 g ground almonds
  • 10 almonds, bitter, with ground
  • 1 kg quark 0.5%
  • 400 g cream cheese, 4%
  • 50 g ground coffee beans
  • 1 pinch of salt
  • 90 g brown rice, ground
  • 150 g cane sugar + 50 g
  • 550 g banana(s), peeled

Working time approx. 30 minutes; Total time approx. 30 minutes

Line a 26 cm ring/springform pan with parchment paper, base and sides. Grind the almonds, both sweet and bitter. Grind the coffee beans, grind the brown rice, and puree the bananas. Stir all ingredients together. Season to taste, adding more sugar depending on the ripeness of the bananas. Pour everything into the 26 cm baking pan lined with parchment paper. Bake in a cold oven at approximately 140°C (convection oven) for approximately 100 minutes. Leave in the pan for approximately 30-40 minutes, remove the ring, and let cool completely before slicing.
