Ingredients for 1 servings:

  • 200 g biscuits (amarettini)
  • 100 g butter
  • 2 apples
  • 1 egg(s)
  • 50 g sugar
  • 250 g mascarpone
  • 4 tbsp Amaretto
  • Pine nuts (alternatively almond sticks)

12 apple tarts with amaretti base and mascarpone – amaretto icing from the muffin tin

Preheat the oven to 180°C (top/bottom heat). Grease a muffin tin and chill. For the base, finely crumble the amaretti biscuits and melt the butter. Mix the crumbs with the butter to form a dough to line the muffin tin. Let it set in the refrigerator. Peel the apples and cut them into small pieces. For the icing, beat the egg with the sugar until creamy, then stir in the mascarpone and amaretto. Distribute the apple pieces among the tartlets, then spread the icing on top. Finally, sprinkle with some pine nuts and bake for about 25 minutes. Alternative shortcrust pastry: 100g butter, 1 tbsp sugar, 175g flour, 1-2 tbsp water, 50g amaretti biscuits, crushed.
